Lime and Coconut Slice

Ingredients
- 2 cups flour
- 1 cup icing sugar
- 1 cup coconut
- 200g butter
- 1 cup sugar
- 2 limes
- 3 eggs
- 1 cup flour
Instructions
- Turn your oven to 160 degrees and line the base and sides of a 20cm x 30cm slice tin with baking paper.
- To make the base, place the first measure of flour, the icing sugar, coconut and butter in a food processor and pulse until the mixture is like fine breadcrumbs. Press firmly into the slice tin and bake for 10 minutes.
- While the base is baking, peel the lime very thinly to have strips of lime peel with as little white pith as possible.
- Place in the food processor with the sugar and pulse until the peel is very finely chopped and the mixture is fragrant.
- Just before you take the base out of the oven, add the eggs, flour and the juice of the limes to the food processor and mix briefly until smooth.
- Pour the filling over the base, then bake another 20 minutes, or until firm to the touch.
- Cool completely then cut into slices and enjoy.
